Giuliana Vinci: Associate Professor of Commodity Sciences (SSD: SECS-P/13) in the Management Dpt of Sapienza University of Rome. University professorship of Sustainable Development and Innovation, Food Commodity Sciences and Nutrition of the Collectivity. Her researches are focused on Sustainable Development, Food Chemisty (Food Quality, Food Security and Food Science Technology) and Nutrition Dietetics. In particular she’s involved in the identification and quantification of bioactive compounds in food matrix as product and/or process markers by chromatographic and spetcrophotometric methods. Her studies are also focused on the determination of nutrients in food of significant interest, novel food and nutraceuticals.
